You guys this is delicious! Why in the world have I never sautéed bananas before?! When you saute bananas they become caramelized and mooshy and delightful. Make this now. It couldn’t be easier! This is not technically even close to being a legit bananas foster. No bourbon, no liquor, no brown sugar, no butter and no ice cream.
I sliced the banana into about 1/2″ pieces and that seemed to work well. I sautéed them in coconut oil but I see no reason you couldn’t olive oil if you needed/wanted to. When building your parfait, you can add anything you want! I chose honey, unsweetened shredded coconut and apple pie seasoning. If you had more purples you needed to use, it would be great with some berries and even some chocolate chips!

Purple: 1 (1/2 banana)
teaspoons: 3 (honey, coconut oil)
Personal Preference Disclaimer: I’d like to add that I do not cook 21 Day Fix recipes incredibly militantly. You may want to count the 1/4 of an orange for the shredded coconut, but I don’t. Do this plan how you choose to while staying healthy.

- 1/2 banana
- 3/4 cup greek yogurt
- 1 tsp coconut oil
- 2 tsp honey
- Slice banana into 1/2" pieces
- Melt coconut oil in pan and add banana slices
- Saute for 3-4 minutes and flip slices over and saute for another 3-4 minutes (each side should have a crispy brown coating)
- Place greek yogurt in bowl
- Top with honey, seasoning, coconut and then banana
