I have a hard time getting in all my veggies each day so I went on a hunt to find ways to sneak spinach into things. I don’t love spinach. It has a certain, spinach-y, taste to it. Ya know? I just recently started putting it in my morning smoothie, and all you people who say you can’t taste it, you’re liars. So when I came across this spinach pesto idea I thought no way this was going to be good. But, you guys, IT WAS!
There is an insane amount of spinach in this little jar. A whole containers worth. When 1st making it I figured that I was going to end up with way more pesto than I could ever need, but behold the magic of the food processor and Vitamix! Since there is so much spinach and so many servings in this jar, it packs quite a veggie punch! And you guys can trust me. I would NEVER tell you that something didn’t taste like spinach if it did. You cannot taste the spinach in this pesto! What the spinach gives the pesto, besides healthy goodness, is this gorgeous green color! It’s so beautiful, you’ll want to make sure you have a little glass jar to store it in so it can make you smile every time you open the fridge.
Also, it’s nut free. I know nuts are a good fat but with the oil still in this recipe, I wanted to cut back on that, so I omitted all nuts (and cheese!). You won’t even notice or miss them!
You can do so much with pesto. It’s great in eggs, on chicken + fish, potatoes, pasta and on sandwiches! It’s also incredibly easy to make, just toss everything in a food processor and viola! Whip some up and play around with it! Sometime soon I’ll be sharing a scrumptious recipe for a frittata made with this beauty.
- 4 cups spinach
- 2 cups basil
- 2 cloves garlic
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/3 cup olive oil
- Put it all in a food processor and blend until smooth and chunk-free
- One serving of pesto is 1 tablespoon
