21 Day Fix Slow Cooker Enchilada Soup

There’s a new-ish company on the faux meat market and they hit the nail on the head. Beyond Meat. It’s crazy how much the texture is like that of chicken. I don’t remember the taste of chicken well but MANY carnivores have commented on how this tastes just right. There is a long article written by food God, Alton Brown, about this fake meat product and the man who knows everything about all food and has tasted everything, loves it too.

This recipe is another from the Skinnytaste cookbook. It called for real chicken and I replaced it with Beyond Meats Lightly Seasoned Strips. The thing that makes these strips work so well in a recipe like this, is that they can so easily be shredded. It’s that secret thing they have going on that gives these strips a real chicken like texture. You just cannot shred other fake chicken strips or chunks.

This recipe is SO easy! I don’t know why but when I use my slow cooker I feel fancy. But cooking with it is anything but fancy. You dump a bunch of stuff in it and walk away. This soup is super filling and bursting with flavors! You could top your soup with reduced fat cheddar, fresh cilantro, sliced avocados, tortilla chips and/or reduced fat sour cream or plain greek yogurt.

21 Day Fix Container Values:

Green: 1 (tomatoes, onion, corn)

Red: 1 (Beyond Meat Strips, black beans)

SERVING SIZE: 2 green container fulls!

Personal Preference Disclaimer: I’d like to add that I do not cook 21 Day Fix recipes incredibly militantly. You may want to count the tomatoes as a purple, black beans as a yellow, not use canned stuff etc. Do this plan how you like while staying healthy.

  • 2tsp olive oil
  • 1/2 cup onion, chopped
  • 3 cloves garlic, minced
  • 3 cups veggie broth
  • 8oz can tomato sauce
  • 1/4 cup chopped cilantro
  • 15ox can black beans, rinsed & drained
  • 14.5oz can diced tomatoes
  • 2 cups frozen corn
  • 1tsp cumin
  • 1/2tsp dried oregano
  • 1/4 cup chopped green onions, for topping
  • 3/4 cup shredded reduced fat cheddar cheese
  • 1 package Beyond Meat Chicken Strips
  1. Heat olive oil over medium heat, add onion and garlic, stirring until soft, about 3 minutes.
  2. Add all ingredients to slow cooker.
  3. Cover and cook on low for 5 hours.
  4. Remove chicken strips from soup and shred,
  5. Return to slow cooker.

According to my 21 day fix eating plan corn & beans are both yellow.

    • Les

Thats what my 21 day fix book says too!

    • trish

For vegans, black beans can be red

I’m making this tomorrow and bought frozen chicken strips for it. Did you put the chicken in frozen or did you thaw it out first?

    • Jes

Sorry for the delay! I toss it in frozen~!

  3. Katie Wasel

I’m a little bit confused… I thought that corn and black beans were yellow containers?

  4. Jes

Vegetarians on the plan use beans as a red since the protein options are so scarce.

    • Les

But this is not vegetarian with chicken?

      • Jes

lol, it sure isn’t! That’s why I used faux chicken.

  5. Les

Is that chicken or a vegan “meat”

Looks delicious! I would like to make this using real chicken. How much should I use in place of the faux chicken?

    • Jes

I would guess 1 pound, but I have never used real chicken. Let me know if it works out!

  7. This doesn’t make sense- how can something that’s only 2 containers full count as 2 red and 2 green??

    • Jes

      1 and 1 ! Had a typo!

  8. Angela

How much chicken do you usually use? I live overseas and buy my chicken frozen in a 5 lb bag. Do you use 1 lb?

    • Jes

This is a vegetarian recipe so I do not use real chicken but I imagine 1lb would be the way to go.

    • Jes

I’m not a calorie counter but there are a lot of sites out there that can calculate that for you!

How many servings does this work out to total? I see that 1 serving is 2 greens, but how many servings come out of 1 batch of this recipe? Thanks!

    • Jes

The soup makes 6 equal servings. I just divvy it up by 6!

  10. I just started my 21 day fix today! Thanks for the recipe!

Hi! I am starting with this program but I am a bit confused in the portions I can eat when everything is together, like in this recipe. This recipe counts as one red and one green, but how much can a serve my self? One red and one green?

  12. Joy

Serving size is 2 cups???? Well that’s awesome!!!

  13. Brittany

how did you figure the serving size was 2 green? isn’t a serving size for recipes usually 1 green?

  14. Brittany

You don’t by chance know the calories do you?!

  15. Christina

I’m not seeing the actual recipe. What is in this and how much?

    • Jes

I fixed it! Thank you for pointing this out. When switching all my recipes over to this new site, some of them didn’t transfer perfectly.
