It’s a healthy and filling taco! These Sweet Potato Tacos are a recipe from the FitGirls 28 Day Kick Start plan. They are incredibly easy to make, take very little time and are a LOT of food.

Full honesty here. I don’t love these. It’s not because they aren’t good though. I mean look at them, they’re beautiful. I have trained my tastebuds so improperly lately that I cannot appreciate natural tasting food. I will combat this and I bet when I do, I come back and tell you that these are delicious.

Sweet Potato Tacos

Ingredients

  • 2 corn tortillas
  • 3tbsp shredded mozzarella cheese
  • 1/2 cup sweet potatoes, diced small and pre-cooked
  • 2tbsp onion, minced
  • 1/2 red pepper, sliced
  • 1tsp olive oil
  • cumin
  • oregano
  • garlic powder
  • pico de gallo or salsa (as much as you want)
  • 2 slices avocado or 2tbsp guacamole
  • dollop of sour cream

Instructions

  1. 1. Coat a frying pan with cooking spray
  2. 2. Saute onions and pepper for 2-3 min
  3. Add potatoes, olive oil and seasoning, saute for 5 min
  4. Remove the veggies from the pan and put in the tortillas
  5. cover each tortilla with 1/2 of the cheese
  6. Cook until melted and tortillas are soft
  7. Fill each tortilla with 1/2 of the veggies
  8. Add pico/salsa, avocado/guac and sour cream
