Not every meal needs to be the product of hours in the kitchen and cooking with all of your pots and pans. This simple, yet incredibly delicious sandwich is super easy to whip up – all you need to do is be prepped with some hard boiled eggs (and they sell pre hard boiled eggs at stores now, so no excuses!). This tomato & egg sandwich with green onion mayo is a protein packed, flavorful and inexpensive meal to throw together when cooking is not on the schedule.
This sandwich can be breakfast, lunch or dinner and I’ve even had it as a snack. Sandwiched in-between a skinny bread thin (I used everything flavored sandwich thins) it’s a light meal yet coated in mayo – WIN WIN!

Serves 1 sandwich
- Sandwich thin
- 1 tbsp chopped green onions
- 1 hard boiled egg
- 1 tbsp light mayo
- 2-3 slices tomato
- salt & pepper
- Spread the mayo on both sides of the sandwich thin
- Sprinkle green onions, salt & pepper over mayo
- Slice egg and layer with tomato slices
