Vegetarian Loaded Mexican Sweet Potatos

I found this recipe for Vegetarian Loaded Mexican Sweet Potatoes on Skinny Taste and knew I had to make it. It sounded so zesty and filling. It was just as zesty as I had hoped and way more filling that I imagined. The original recipe calls for 1 whole sweet potato per serving, but I cut it in half.

This recipe is inexpensive and fast to make. I pre-baked all my potatoes and whipped up everything else so that I can enjoy these for lunches and dinners this week. I’ll pop a potato back in the oven for 10 minutes for dinner and in the microwave for lunches.

As always, I recommend using a homemade taco seasoning to avoid all the additives in store bought:

  • 1  Tbsp chili powder
  • 2  tsp  ground cumin
  • 1  tsp coriander
  • 1/2  tsp onion powder
  • 1/2  tsp garlic powder
  • 1/2  tsp dried oregano
  • 1/2  tsp smoked paprika
  • 1  tsp sea salt

This meal is so filling! We owe that to the sweet potato and black beans. Such a healthy alternative to traditional loaded baked potatoes.

Vegetarian Loaded Mexican Sweet Potatos

Ingredients

  • 4 medium sized sweet potatoes
  • 1/2 cup light sour cream
  • 1 tsp taco seasoning
  • 1 tsp olive oil
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1 can black beans, rinsed and drained
  • 1/2 cup salsa
  • 1/2 cup reduced fat Mexican cheese, shredded
  • 1/4 cup chopped green onions

Instructions

  1. Preheat oven to 400
  2. Poke holes in each potato with a fork
  3. Bake potatoes for 50 minutes
  4. Mix sour cream with taco seasoning
  5. Heat oil in pan
  6. Add peppers, onions, chili powder, paprika & cumin and cook for 5 minutes
  7. Add beans and cook for 5 minutes
  8. Slice potato lengthwise (one serving is 1/2 sweet potato)
  9. Top with 2 Tbsp cheese, 1/3 cup black bean mix, 2 Tbsp sour cream and 2 Tbsp salsa
